Rejecting the reductive image
For too long, Moroccan cuisine abroad has been reduced to a few clichés: a chicken tajine, a Friday couscous, a pastilla as a starter. As if an entire country — with its mountains, coasts, deserts and ancient cities — could fit into three dishes.
At Choukran, we reject this reduction. Morocco is a land of incredible diversity: Amazigh, Arab, Andalusian, African, Mediterranean. And its cuisine reflects that richness. Every region, every family, every season brings something different to the table.
A contemporary Moroccan identity
We are a generation between two cultures, two languages, two shores. We grew up with the taste of darija on our tongues and the rhythm of Paris in our ears. This dual belonging is not a contradiction — it's a strength.
Choukran was born from this conviction: you can honour the cuisine of our mothers while presenting it differently. Not better, not worse. Differently. With a contemporary visual language, a modern space inspired by Moroccan craftsmanship without falling into the cliché of "oriental décor."
Telling our own story
Too often, our cuisine has been told by others. Interpreted, simplified, sometimes caricatured. Choukran is the desire to reclaim our voice. To show what Moroccan gastronomy truly is when it's carried by those who lived it, tasted it, passed it on.
That's why our recipes come from families, not books. Why our menu evolves with the seasons. Why every dish tells a story — of a mother, a memory, a land.
Spaces that reflect who we are
Our restaurants don't look like any other Moroccan restaurant in Paris. No clichés, no red carpets or brass lamps at every corner. Our spaces are designed as contemporary living places, where zellige meets concrete, where lines are clean but materials are rich, where you feel at once in Casablanca and in Paris.
Because Moroccan elegance is not folklore. It's the precision of a Fes artisan, the rigour of a geometric pattern, the softness of hand-polished tadelakt.

To reinvent, for us, is not to betray. It's to transmit differently. It's telling our parents: we received what you gave us, and we're making something that looks like us. It's telling the world: Moroccan cuisine is alive, it moves, it evolves, and it doesn't need to be turned into a museum piece to be respected.
